Ingredients

  • Ready-Bake 92mm Butter Shortbread Shell

Custard diplomat

  • Instant custard 200gm
  • Whipped cream 100gm

Fruit salad

  • Strawberry 4 each
  • Mango 8 slices
  • Kiwi 4 slices
  • Passion fruit pulp 1/2
  • Blueberries 6 each
  • Raspberries 6 each

Method

  1. Prepare instant custard then fold in whipped cream until smooth.
  2. Blind bake 92mm Butter Shortbread Shell until golden.
  3. Pipe cream diplomat into pastry shell ¾ full.
  4. Place fruit neatly on top.
  5. Glaze with clear gel.
